Old Fashioned Fresh Peach Cobbler

 Old Fashioned Peach Cobbler with a scoop of vanilla ice cream….what more can I say.

I had some fresh peaches and wanted cobbler but didn’t have a recipe, so this is what I came up with. Hope you like it, we sure did!




Carrie’s Fresh Peach Cobbler

Ingredients:

4-5 medium fresh peaches, peeled, pitted and sliced into thin wedges

1/4 cup packed brown sugar

1/4 tsp. ground cinnamon

1/8 tsp. ground nutmeg

1 tsp. lemon juice

1 tsp. cornstarch

1/4 tsp. almond extract  

3/4 cup all-purpose flour

1/4 cup packed brown sugar

1/2 tsp. baking powder

1/4 tsp. salt

1 tsp. ground cinnamon

1/2 cup real butter (1 stick), chilled and cut into pieces

2 Tbl. boiling water



Directions:

Preheat oven to 425 degrees.

Coat an 8×8″ or 9×9″ baking pan with cooking spray.

In a medium bowl combine the peaches, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch and almond.

Toss to coat evenly and pour into the baking dish.Old Fashioned Fresh Peach Cobbler 1In the same bowl combine the flour, brown sugar, baking powder, salt and cinnamon.

Mix well.

Using a pastry cutter or 2 knives in a  criss-crossing motion, cut until it resembles a coarse mixture.

Pour in the hot water and mix in well. Old Fashioned Fresh Peach Cobbler 2Spread over the peach mixture as evenly as possible. Old Fashioned Fresh Peach Cobbler 3Place in the oven and bake for 35-40 minutes, or until the peaches are tender and the topping is cooked through and golden.
