This dutch oven casserole is an easy toss together dish that has a base of Dorito chips and a couple of other purchased ingredients to make this a terrific choice for a camping trip or a backyard cookout.
Combining Dorito chips and cheese, that’s a true win that will satisfy ALL ages.

Keep in mind anything you can fry, bake = cook in your kitchen you can generally do in a dutch oven. For example, this recipe can be followed as directed, poured into a prepared casserole dish then baked in your home oven at 350 degrees for approx 20-30 min; until hot and bubbly. Dutch Oven Dorito Enchilada Casserole
Supplies:
9 – 9 1/2″ CAKE PAN, optional
12″ DUTCH OVEN
Ingredients:
10.5 oz. package Doritos (I used nacho cheese), reserve 1/3 of the bag for topping
1 small onion, finely chopped
10 oz. can chili with beans
10 oz. can enchilada sauce
8 oz. tomato sauce
1 1/2 cup shredded cheese*
*8 oz. cheese total
Toppings –
1/3 of the Doritos
1/2 cup shredded cheddar cheese*
1 cup sour cream
Instructions:
Click HERE for a tutorial on how to start the charcoal and lots of helpful basic instructions. This comes together so quickly, you’ll want to get everything ready BEFORE beginning this recipe, it’s a favorite!
We like to use an 9 – 9 1/2″ CAKE PAN to put inside the 12″ DUTCH OVEN for this recipe. Either spray the CAKE PAN with non-stick cooking spray OR You can lightly oil or coat the inside of the DUTCH OVEN it-self with cooking spray.
Add finely chop the onion.
Reserve approximately 1/3 of Doritos, crumble the rest in a large mixing bowl.Add in the finely chopped onion, canned chili, canned enchilada sauce, tomato sauce and 1 1/2 cups of the shredded cheese to the crushed Doritos.
Stir together well.Pour the mixture into the prepared cake pan OR prepared dutch oven.
Put the lid on top of the dutch oven.
Put approximately 10 prepared coals on your metal plate, or whatever surface you are going to cook on.

Place approximately 16 lit coals on top of lid.Bake until the enchilada mixture is bubbling, approx 20 minutes; however, check periodically.
Carefully remove the lid with a lid lifter. Top with remaining Doritos, crushing as you put them on top.
Sprinkle on the remaining 1/2 cup of shredded cheese.Cover with lid and bake for another 5 minutes or so until the cheese has melted and Doritos are warmed through.
Scrumptious!!!Serve as is, or with a dollop of sour cream if desired.
